POTATO DISHES IN THE WEEK WITHOUT MEAT
In the weekend before the National Week without Meat, an article was published on Foodlog about a new diet: the boiled potato. So we think it’s a good idea to make a lot of (cooked) potato dishes this week. We give you a few ideas:
- Indian potato curry with, for example, cauliflower or broccoli
Peel the potatoes and cut them in half and add the following herbs: 1 teaspoon garam masala, 1 teaspoon cumin, 1 teaspoon paprika powder, pinch of cinnamon, 1/2 teaspoon of turmeric and ½ teaspoon of ground coriander seeds. Fry 2 cloves of garlic and a piece of fresh ginger in oil. Then add the seasoned potatoes and stir it for a few times. Add a can of tomato pieces and 250 ml coconut milk and let it cook slowly until the potatoes are cooked.
- Vegetarian potato salad
- Oven-baked potato dish with seasonal vegetables (carrots, sprouts, pumpkin, parsnip and a can of kidney beans)
Positive impact on the environment
Easy and healthy potato dishes without meat. Vegetarian food is not boring, difficult or not tasty. Try, taste and vary. Not eating meat for more than a day has a huge positive impact on people, animals and the environment. In addition, compared to other products such as rice, potato cultivation has a low impact on climate change, land use and energy consumption.
